Cost Controller – Food & Beverage

About the role

We are seeking a detail‑oriented Cost Controller to manage Food & Beverage cost control, inventory accuracy, pricing integrity, and operational compliance across our outlets. The role bridges Finance and Operations, ensuring efficiency and profitability through rigorous monitoring and analysis.

Key responsibilities

• Control Food & Beverage costs by monitoring wastage, pilferage, and efficiency.
• Prepare and communicate variance analysis for F&B items.
• Update and maintain receipts in the FMC system.
• Verify voids, discounts, happy‑hour offers, complimentary sales, staff meals, event packages, and settlements across POS, WAS, PointSoft, Sun & Oasis systems.
• Cross‑check sales transfers to the Property Management System (PMS) and identify lost postings.
• Ensure cost of sales stays within budget and menu pricing is correctly loaded in all systems.
• Tally end‑of‑shift reports from all tills and conduct spot checks for accuracy.
• Prepare daily, monthly, and duty‑drinks reports for management.
• Participate in stock‑taking, verify receiving scales, and ensure material issuance follows requisition procedures.
• Link articles and recipes in Material Control and maintain menu pricing and consumption records.

Required profile

• Strong analytical mindset with a focus on detail.
• Experience in Food & Beverage cost control or similar hospitality finance role.
• Ability to work collaboratively with restaurant management and finance teams.
• Proactive in identifying weaknesses and suggesting process improvements.
• Good understanding of inventory management and internal control procedures.
